Ingredients and spices needed to prepare Jini Dosa:

  1. 3 cups dosa batter
  2. oil properly
  3. 2 cups/400g potatoes, peeled and cut into 1-inch cubes (3 medium-sized)
  4. 1 to ½ to ¾ cup medium onion, chopped or sliced
  5. 1/2 teaspoon minced or grated ginger (about 1 inch)
  6. 1 sprig curry leaves
  7. 1/4-1/2 teaspoon mustard
  8. 1/2 teaspoon cumin
  9. 1 teaspoon Chana Dal
  10. 1 teaspoon uradal dal
  11. 1-2 chopped or chopped green peppers
  12. 2 tablespoons finely chopped coriander leaves
  13. 1/8 teaspoon turmeric (use more if needed)
  14. 1 pintxo (optional)
  15. necessary salt
  16. 2 tablespoons of oil

Steps to make Gini Dosa

  1. Cook the potatoes in a pot or pressure cooker.
  2. If you are cooking in a pot, bring the water to a boil and add the chopped potatoes. Cook them until soft or mushy and they won't fall apart. OR if cooking in a pressure cooker, place the potatoes in a bowl and add a little water. Close the lid and cook for 3 whistles on medium heat. Make sure the potatoes are freshly cooked and not too soft or mushy.
  3. Heat oil in a pan and add mustard and cumin. When they start to sizzle, add chana dal and urad dal.
  4. Fry until golden brown, then add five. Add onions, green chillies and curry leaves. Fry until the onion becomes transparent. Then add the ginger and stir for 30 seconds.
  5. When the onion becomes transparent, add the potatoes, turmeric and salt. Make a light mash and add very little water or boiled potato stock to moisten the whole potato masala.
  6. Stir and cook for 1-2 minutes. Add coriander leaves. Serve with papa masala dosa.
  7. Now heat an iron pan or a frying pan. Dip a paper towel or half an onion in oil and spread the oil all over the pan.
  8. Use a heavy cast iron skillet as this part will take longer to cook. keep the pan on low heat. Then take the dosa battered spoon. roll out the dosa dough into a neat round circle.
  9. Cook on low flame until the top of the dosa is cooked. When the top of the dosa looks cooked, add 1 tbsp of aloo sabzi.
  10. Cover with a lid and cook for 30-45 seconds. keep fire down or sim.
  11. Start by slicing the dosa with a knife, steel (avocado) spatula or pizza cutter. A cast iron pan works best as the dosa is cut slightly above the pan.
  12. If you don't have an iron pan, just roll the whole dosa. Transfer to a steel plate or cutting board and then cut the dosa with a knife.
  13. You can cut the dose into three or four parts.
