  10. 1 small cup peanuts
  11. 2 tablespoons oil
  12. 1 teaspoon mustard seeds
  13. 1/4 teaspoon turmeric powder
  14. 1 teaspoon coriander powder (dhaniya).
  15. 2-3 green chilies (finely chopped)
  16. 1/2 inch ginger (grated)
  17. Salt to taste
  18. 1/4 teaspoon amchura (mango) powder.
  19. 1/4 teaspoon red chili powder
  20. 2 tablespoons green coriander leaves (finely chopped)

Masala Dosa Instructions

  1. Peel Urad-dal, Chana-dal and Meti, wash and soak in water for 4 hours or overnight. Clean, wash and soak the rice in another bowl with the same amount.
  2. Remove the water from the soaked dal and grind the dal mechi with a little water until you get a smooth paste, then put it in a large bowl. Similarly, using a little water, grind the rice but make a thicker paste. Mix 2 pastas together and form a thick mixture that doesn't flow freely when poured into a spoon.
  3. Salt the mixture, let it rest, cover and leave for 12-14 hours. The amount of fermented mixture is doubled. This mixture is ready for dosage preparation.
  4. In winter, use active yeast for fermentation, just soak 2 teaspoons of yeast in boiling water for 15 minutes and mix it into the mixture.
  5. Boil potatoes, let cool, peel and cut into small pieces. Heat oil in a pan (kadhai), put the rai in boiling oil and fry. Now add turmeric powder, coriander powder, then green chilies, ginger and saute for 1 minute.
  6. Add peanuts and fry. Put potatoes, salt, amchur powder, red pepper in a pan with spices and fry for 2 minutes. Turn off the gas and mix the coriander with the roasted spices. The condiments needed for the Dosa are ready.
  7. Mix the dough with a spoon, if it feels too thick add water and make a measure.
  8. Serve with coconut sauce.
