  1. Cook the dosa over medium heat. Grease the pan. I dip a paper towel in sesame oil to grease the pan (I use a pre-seasoned cast iron skillet). Lubricate the skin with a cup of fermented baht. Dilute it for a crispy pancake. Cover with a lid, flip the pancakes for a minute to brown the other side, then remove from the pan - about a minute. Serve with your favorite chutney - coconut, mint or tomato chutney. You can also fill dosa with potato crust
